Broccoli Bacon Salad

Ingredients:
- 4 cups broccoli florets, chopped
- 6 slices bacon, cooked and crumbled
- 1/4 cup pumpkin seeds
- 2 tbsp honey
- 1/4 cup mayo
- 1/4 cup plain dairy-free (DF) coconut yogurt
- Salt and pepper to taste
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
Instructions:
1. In a large bowl, combine the chopped broccoli, crumbled bacon, and pumpkin seeds.
2. In a separate bowl, whisk together the honey, mayo, DF coconut yogurt, lemon juice, and apple cider vinegar until smooth.
3. Pour the dressing over the broccoli mixture and toss to coat evenly.
4. Season with salt and pepper to taste.
5. Let the salad chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
