Chicken Bacon Rice Soup

Ingredients:

- 1 tbsp olive oil

- 1 medium onion, finely chopped

- 2 celery stalks, diced

- 2 carrots, peeled and diced

- 2 garlic cloves, minced

- 4 slices bacon, cooked & chopped

- 1 cup rice, rinsed

- 6 cups bone broth

- 1 tsp dried thyme

- 1 bay leaf

- 2 cups shredded roast chicken

- 1 cup kale, stems removed, chopped

- Salt and pepper to taste


Instructions:

1. In 'Sauté' mode, heat olive oil. Add onion, celery, carrots, and cook until soft. Mix in garlic and turkey bacon.

2. Add rice, broth, thyme, and bay leaf. Close lid, set to 'Manual' for 5 mins.

3. After cooking, allow natural release for 10 mins, then quick release. Add chicken and kale, stir until warm and wilted.

4. Season with salt, pepper.
