Easy Lemon Gelato Recipe-Ninja Creami Deluxe

Ingredients:

- 2 cups full-fat coconut milk

- 3/4 cup fresh lemon juice

- Zest of 2 lemons

- 1/2 cup agave or maple syrup

- 1 tsp vanilla extract

- Pinch of salt

- 1 tbsp unflavored gelatin or agar-agar


Instructions:

1. Hydrate Gelatin: Mix gelatin with 1/4 cup cold water. Let sit for 5 mins.

2. Dissolve Gelatin: Heat gently until dissolved, avoiding boiling.

3. Blend: Combine all ingredients in a blender until smooth.

4. Chill: Refrigerate mixture for 2 hours.

5. Freeze: Pour into Ninja Creami container and freeze solid (~24 hours).

6. Churn: Use Ninja Creami on "Gelato" or "Ice Cream" mode.

7. Serve: Enjoy in bowls or cones, garnished with lemon zest or mint if desired.
