GF DF & Egg-Free Waffles

- 2 cups gluten-free all-purpose flour blend
- 1 cup vanilla beef protein powder (or GF/DF protein alternative) 120g
- 4 tsp gluten-free baking powder
- 1/2 tsp salt
- 1/4 cup hemp seeds or chia seeds
- 1 tsp cinnamon
Wet Ingredients:
- 2 1/2 cups unsweetened DF milk (I used almond but could use coconut or soy to make it nut free)
- 4 tbsp ground flaxseed mixed with 3/4 cup water (rest for 5 mins to form flax eggs)
- 1 tbsp apple cider vinegar (ACV)
- 2 tsp vanilla extract
Instructions:
1. Combine all dry ingredients in a large bowl.
2. Mix your flax egg and let sit. In a separate bowl, mix all wet ingredients until well blended.
3. Pour the wet mixture into the dry ingredients and stir to combine.
4. Preheat your waffle iron and lightly grease with additional coconut oil.
5. Pour batter onto the hot waffle iron and cook according to the manufacturer’s instructions until golden and crisp.
6. Serve with your choice of toppings. Make it sweet or savoury 😋I usually make 4 x this recipe to get a stock pile in our freezer to pop in the toast for rushed mornings!
