Thai Turkey Meatballs

INGREDIENTS:


1lb organic ground turkey (or sub ground chicken)

1 egg

1 cup gluten-free or grain-free cracker crumbs (crackers broken into breadcrumb-like pieces)

2 cloves garlic, minced

1 teaspoon ground ginger

1.5 tablespoon coconut aminos

1 tablespoon red curry paste sea salt and black pepper to taste


coconut curry sauce:

2 tablespoons avocado or olive oil

1 red bell pepper, sliced

1 small onion, diced

2 tablespoon red curry paste

1 - 13.5 ounce can full-fat coconut milk

1 tablespoon coconut aminos cilantro for garnish



I baked my meatballs in the oven at 350 for 15 min. While they cooked I combined sauce ingredients in a pan and brought to a simmer. When the meatballs were done I added them to the sauce and simmered for 5 min. Then served on rice. I made egg free too by shredding an apple and adding 1/4 cup apple sauce and I didn’t have coconut aminos so used soy sauce instead
